Protein Almond Flour Chocolate Chip Cookies

These cookies are high in protein and have the added bonus of almond flour!

Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup dark chocolate chips

Directions

  1. Preheat your oven to 175°C and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, protein powder, baking soda, and salt.
  3. In another bowl, whisk together melted coconut oil, honey or maple syrup, egg, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Fold in the dark chocolate chips until evenly distributed throughout the dough.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them slightly apart.
  7. Use your hands or a fork to flatten the dough slightly.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
