Protein Almond Flour Pancakes

Another variation of a protein pancake recipe, this one using almond flour.

Ingredients

  • 1 cup almond flour
  • 1 scoop vanilla protein powder
  • 2 eggs
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon low cal sauce (maple syrup flavour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Cooking spray or coconut oil for cooking

Directions

  1. In a mixing bowl, combine almond flour, protein powder, baking powder, and salt.
  2. In another bowl, whisk together eggs, almond milk, honey or maple syrup (if using), and vanilla extract until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
  4. Heat a skillet or griddle over medium heat and lightly coat with cooking spray or coconut oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes, or until bubbles form on the surface of the pancake and the edges start to set.
  7. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
  8. Serve warm with your favorite toppings such as fresh berries, sliced bananas, nut butter, or a drizzle of maple syrup.
